RED LENTIL RAINBOW SALAD

Life's a bowl of cherries... with avocados, red lentils, and broccoli!

This salad/slaw, whatever you want to call it is SO handy and can we just point out the obvious, "what a stunner, amIright?" Dish got colluh!


Pairs amazingly with pulled pork, turmeric grilled chicken, sandwiches, on top of salads... just about anything! I even like to throw blueberries in here sometimes too;) Perfect for 4th of July 🇺🇸 for this weekend! Lmk what you think❤️.

INGREDIENTS: 
3oz Olive Oil
3 oz Cider Vinegar
2 bunches Scallions
S&P
1 head broccoli
1/4-1/2 red cabbage (listen to video)
1/2 C red lentils (boil broth- then pour over drained lentils sit for 30 mins)
3-4 Radishes thinly sliced (mandolin if you have one)
3/4 Fresh Pitted Black Cherries (1/4C dried cherries)- Blueberries are nice too!
1/4 Ripe Avocado1/4 C Toasted Pumpkin Seeds
1 lime Juice Optional: Cherries to garnish, fresh cilantro leaves
