Pumpkin Overnight Oats

 

Strictly for the sake of research, I ate this recipe daily throughout fall and I can confidently say it is a healthy and delicious way to celebrate the season. These overnight oats are easy, creamy, sweet and satisfying! Enjoy! 

*Note* @corepower milk makes a BIG difference and no, this isn't an ad. I use it in my coffee etc. Really love this product*

  • 1 C Oats
  • 8 oz Canned Pumpkin
  • 1 1/3 C Corepower Vanilla Milk (this makes a difference!) 
  • 5.3 Greek Yogurt 
  • 2 TBS Chia Seeds
  • 1 Scoop Vanilla Quest Protein Powder
  • 1 tsp Pumpkin Spice 
  • 1 tsp Maple (or vanilla) extract 
  • Pinch of salt 


1. Stir together ingredients together in large bowl. 
2. Store overnight in refrigerator in air-tight containers. 
3. ENJOY!
