Green Mediterranean Meatballs


When making lean meatballs, we NEED to incorporate moisture from outside sources. (That is, if we want it to taste good!). We can use onions, vegetables, or even fruit but baking them straight just a crime against meatballs!!!

In this Jerusalem inspired turkey meatball recipe, I use zucchini & a ton of herbs to make most of my garden while I still can! ❤️

Ingredients
1 zuke
1 egg
1lb lean ground turkey
Generrous handful of Mint & Cilantro
1-2 Bunches Scallions
2 Garlic Cloves
1 TBS Cumin
1 tsp Harissa
Salt & Pepper to taste
*Optional: 1/4 C Raisins*

Yogurt
1/2 C Greek Yogurt
1 Lemon
1 tsp Harissa (the real stuff)
1 tsp minced garlic

Fig Ketchup
1 part fig jam to ketchup (SO EASY!)
